Happy Good Friday! I can’t believe it is almost Easter! I must really be dragging my feet this year, or Easter came way earlier. Yes, I’m that terrible mother who forgot to dye Easter eggs with the kids, and forgot to go shopping for cute Easter dresses for my girls. I’m pretty much just treading water over here, desperately trying to stay afloat.
The good news is I don’t have to do it all by myself! By the grace of God, I have been saved. I give thanks this Easter season knowing God’s love for me is unfailing, unending, unconditional, undeserved, perfect, powerful, personal, patient, extravagant and ENOUGH! I may not be able to do it all, but I find peace in knowing that nothing can tear me from the grip of his mighty love.
If you’re like me this Easter and didn’t have much time left over for cute decorations or projects, I’ve got the perfect quick and easy Easter goody for you. I simply whipped up some chocolate covered Easter strawberries for my table. My children had fun helping me make them and they are delicious too!
To make my chocolate, I popped one cup of chocolate chips and about a teaspoon of coconut oil in the microwave until melted. Then I dipped my washed and completely dry strawberries into the chocolate. (If your strawberries are not completely dry the chocolate will not stick.)
I used a zip-lock biggie as a piping bag and drizzled the leftover chocolate onto the strawberries.
To harden up the chocolate, simply pop the strawberries in the fridge for about ten minutes.
These strawberries would make a beautiful addition to any Easter tablescape, don’t you think?
I added a cute little bunny to guard my strawberries from small, hungry children. Needless to say, it didn’t work. They want to eat him too.
Just a little fun fact: I can’t eat chocolate! I had to suffer through making these and the delicious smell while not licking my fingers even once.
Even if you don’t have a ton of time this Easter, you can still whip up a delicious treat for your friends and family.
This Easter I am choosing to focus on the cross. Sin has lost its power, death has lost its sting. From the grave you’ve risen victoriously. Into marvelous light I’m running, out of darkness, out of shame. By the cross you are the truth, you are the life, you are the way! Praise Jesus!
